73 Hours Bi Weekly, 12 hr shifts on a rotating schedule

JOB SUMMARY

This position is responsible for producing meals on a large scale for the Lake County Correctional Facility.

ESSENTIAL DUTIES and RESPONSIBILITIES
? Prepares all meals for the inmates and the corrections facility personnel.
? Prepares special diets as required.
? Conducts daily prep work for all meals.
? Supervises and aides in the cleaning and sanitizing of all areas of the food service department to include the dining areas.
? Maintains records pertaining to supply usage and inventory.

ADDITIONAL DUTIES and RESPONSIBILITIES
? Helps the Director supervise the inmates assigned to the food services department.

QUALIFICATIONS

EDUCATION and/or EXPERIENCE
High school diploma or general education degree (GED) is required. Experience as an institutional or commercial cook is preferred. Equivalent combination of education and experience may be substituted.

CERTIFICATES, LICENSES, REGISTRATIONS
? Must possess a valid Florida driver?s license

KNOWLEDGE, SKILLS and ABILITIES
? Ability to communicate effectively.
? Ability to do skilled cooking on a large scale.
? Knowledge of general nutrition, health and sanitary requirements.
? Knowledge of health hazards in food preparation, service and necessary precautionary measures.
? Knowledge of food menus, values, relative costs and portion control.

WORK ENVIRONMENT
This position requires all work to be performed inside the Lake County Correctional Facility. The noise level in the work environment is usually moderate to high. Depending on assignment, the employee may be required to work long and/or irregular work hours, including evenings and/or weekends. While performing the duties of this job, the employee may encounter the following: verbal abuse, chemicals, fumes, noise, vibrations, slippery surfaces, allergenic substances, irregular eating and sleeping schedules, bodily injury, and contact with blood, bodily fluids, infectious or contagious diseases.
